The Wall Fell, and a new blog to read

A few weeks ago I was invited by my friend Brian Duffin, who is an editor of the Millennial Star blog to be a contributor.

Here is my first offical entry The Wall Fell

It talks about the fall of the Berlin Wall, which happened 20 years ago today. This event has a lot, and I mean A LOT of meaning for me personally.

The one thing I keep coming back to as I watch the East Berliners going into the West is that they ran. They ran to freedom. They ran to freedom.

Have we considered our freedoms lately?

15 mins of Fame!

I would just like to say that after calling my Congressman today and getting laughed at by the dork answering the phone, I tweeted, I facebooked it, then I called the Gleen Beck Radio Program and told the nation about it.

Yes, I got on a nationally syndicated radio show and told my story. If you care it's today's show, the third hour about 35-40 min in.

Joseph recorded it on his MP3 player, if anyone knows how to upload an audio file to blogger or of a program that will do it, then let me know!

This is my 15 mins of fame! I am AWSOME today!

The Great Pumpkin: Pumpkin Rolls

Me not being a fan of Halloween aside, I do love me some PUMPKIN!!

Yesterday I made one of my all time favorite desserts, which I have never made. Pumpkin Rolls......oh ymmmmmmm! Here is where I will say, Cream cheese frosting is my secret love....



Here is the recipe:

For the cake:
3/4 C flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon*
1/2 tsp cloves*
*if you don't have cloves, because I never seem to have cloves, just use a 1 tsp of pumpkin pie spice.
3 eggs
1 C sugar
2/3 C pumpkin

Method: In the wet bowl combine sugar, eggs, pumpkin and blend. In the dry bowl mix flour, b-powder, b-soda, salt and spices. Combine with the wet bowl and blend well.

To bake: before hand, prepare a 10x15 jelly roll pan by lining it with parchment or wax paper. Also spray the paper with Pam for Baking or Baker's Joy. If you don't have either of these grease and flour the paper. Spread the cake batter onto the paper and bake at 375* for 13-15 mins or till the cake springs back. While the cake is baking prepare a clean cotton dishtowel by sprinkling powdered sugar on the towel. When the cake comes out of the oven, peel it off the paper and roll the cake into a roll shape using the towel, starting the roll on the small end of the cake, sugar side toward the cake. Allow to cool on a wire rack.

For the filling:
1 stick of butter
8 oz Cream cheese
1 C powdered sugar
1 tsp vanilla

Method: butter and cream cheese need to be at room temp, add sugar and vanilla and blend till smooth.

Unroll the cake and spread the filling all over the cake. Roll it back up and sprinkle the cake with powdered sugar. Allow to chill for at least an hour and slice.


I'm just going to say, if I make it thru this, the pumpkin carrot cake is next....

The Halloween That Wasn't

There are no cute Halloween pictures to be had here...so move along.

I have to say, I am no fan of Halloween, so I really was not disappointed that we all ended up being sick. Mom did send us some little treats, DOTS included, and I did buy one, just ONE bag of Snickers minis, and candy corn. You can't not do the candy corn. Other than that, there were no festivities. We turned our clocks back to the normal time, and went to bed at 8:30. I know, I know, so very exciting. If only you could live my life....suckas!

Sunday found us at home lolling between eating and watching Star Trek reruns. Joseph was a real champ and watched James all day so I could sleep off that strange 'jelloey' feeling you get when you are sick. We did not go to Church. I decided long ago that we would not be 'that' family. You know, the one who always comes to church, snotty nosed kids in tow. No way. I am not from the school of stay home only if you're bleeding to death. No, if you are sick, just stay home, the Church will go on, just like Celien Dion's love for the Titanic, even though that boat sank.

We're much better today, and have already been to Santa Fe to drop my car off to be fixed from the hail damage from this last summer's storm. Yes, it's November and we're finally getting it done. That's the beauty of living the middle of nowhere to get things fixed. All I can say is that if Minnie the "helpful" lady from State Farm claims calls, I might just reach thru the phone and strangle someone. She was less than helpful last time.

And in big news...or should that be BIG news...Sweet Baby James is cutting his first tooth. Sadly, I have no pictures for that either, as he won't open his mouth long enough for me to get a photo. It's there though, I can feel it....let's hope the its twin comes in soon, otherwise this kid will be known as Snaggletooth!

Halloween

Sweet Baby James' first Halloween will find us at home, going to bed early. Seems we have the germ of the week, not to mention the fact that our family car is having some "issues" right now.

With that said, we'll be waiting in the pumpkin patch, with all of our sincerity to welcome the GREAT PUMPKIN!
